Thyme, a small perennial shrub is native to the western Mediterranean. The first name was given by the ancient Greeks and is derived from an ancient Greek verb meaning sacrifice and for that reasonit was used as incense in temples. Another version says that it comes from the word meaning angry that means courageous. It is known that the Roman soldiers used it to gain strength and energy.
In the Kitchen: Used as a spice for flavoring various dishes with fish, meat in different sauces, soups etc. As a decoction: boil a small handful to 1 cup water. Once it starts boiling immediately remove and leave to stand 10 minutes. Then strain it and drink it. 3 cups a day after meals.
